Almost-Paleo Oatmeal Bars {Breakfast Madness}

Hello and WELCOME!  If you are dropping by from Pinterest, like thousands of others, please subscribe to  my blog on the left hand side!  

I need to eat breakfast.  Nothing too substantial, but I need something in my tummy and a plain "granola bar" won't cut it.  If not, I'm eating something an hour later.  I made some breakfast oatmeal bars last year.  They were good, and big enough to fill me up in the morning.  But, they had sugar and other naughties.

We have been eating pretty healthy, and I needed an updated/upGRADED recipe.  Enter:  Paleo recipes.  Almost fully Paleo.  That's how we eat.  Mostly Paleo, but nothing super restricting.  This, and a little more activity at my new job has lightened me by 20 pounds in the last few months.

I'll take it.

But, I love oatmeal.  Especially for breakfast.  So, lets mesh this all together.
Oatmeal-mostly paleo-breakfast bars.

My base recipe is found here.

Ingredients:

*2.5 cups regular rolled oats (not instant oats).  Please, don't buy instant oats.
*3 tbsp chia seed  (I didn't have any, so I skipped this.  But they are VERY good for you.)
*1/2 cup + 1 tbsp ground flax
*1 tsp cinnamon  (I love cinnamon, I always add extra)
*1 tsp baking powder
*1/4 tsp salt
*1.5 cups almond milk
*1/2 cup pure maple syrup
*2 tbsp nut or seed butter (I used natural peanut butter.  If you don't eat natural peanut butter, you should switch.  It is much better for you and tastes SO much better!  You don't need to consume sugar and preservatives in something easy like PB!)
*1 banana, chopped small (I used a fairly large banana, very ripe)  I suggest cutting into SMALL pieces.
*1 tbsp pure vanilla extract

Preheat oven to 350 degrees.

1.  Use a food processor to blend 1 cup of your oats into an oat flour.


2.  Use large bowl to combine dry ingredients.  Your oat flour, the rest of your rolled oats, chia seeds, flax, baking powder, salt, cinnamon.  Wisk together.


3.  In a small bowl, combine wet ingredients.  Milk, syrup, peanut butter, banana, vanilla.  Whisk until smooth.  This is where how small you chopped your banana comes into play :)  (This little mixture smells just amazing, FYI.)

I had to use a masher to get these banana chunks smaller.

4.  Slowly incorporate your wet mixture into your dry mixture.

5.  You can now add any additional healthy bits that you wish.  I added dried cranberries, fresh blueberries, also some almonds that I chopped up in my food processor.  (You could add other nuts, fruit, or even chocolate.)


**This is a very WET mixture, more "sloppy" than I expected, but don't fret, it will come out great!

6.  Add combined mixture to 8x8 pan.  I do not have one (weird, I know) so I used a muffin pan.

BEST IDEA EVER!  This way, everything is perfectly divided into individual servings.


7.  Bake at 350 degrees for 35-40 minutes.  I did 15 minutes, rotated my pan, 15 more minutes.  Then I poked them with a knife (we don't have toothpicks) to check consistency...and cooked for probably about 5-7 more minutes.


They came out PERFECTLY!  


The muffin pan was a genius idea, but of course, you can use a regular pan and have more reign of your serving size.  **Note:  the mixture divided perfectly into 12 muffin sized portions**  They have a nice shape, and are easy to handle/consume.  They taste like a delicious banana bread with an oat texture added, and of course the fruit gives it a little zing.

There are a lot of substitutions available here as well.  You can use any type of milk.   You can use a nut/seed butter instead of regular peanut butter.  You can add any other type of seed/nut, like hemp seeds or walnuts.  Instead of maple syrup, you can use something like liquid Stevia.  Instead of a banana, you can use one egg (which will obviously not give you the great banana flavor).  You can also add sugar or brown sugar if you are feeling rebellious.  But that is one FANTASTIC thing about these:  NO SUGAR and NO FLOUR!

Homemade Rootbeer Schnapps



My family, like E.X.T.E.N.D.E.D. family has a gigantic family reunion every five years.  It is my paternal grandmother's family ancestors.  It has been going on since the 80's and is always something we all look forward to.  For years.  

It was supposed to be this weekend.  In the Brainerd Lakes area.  Yeah...the area that just got pommeled by storms a few nights ago.  Our resort is now closed, and the tough decision was made to CANCEL the reunion. For the first time since its inception.  Yikes!

TEARS.  {Not from me.}  But a few of my younger cousins were devastated.  And of course, everyone is bummed out.  With no time to re-book a large group and a dinner party, my cousin has kindly offered her husband's family cabin as a backup plan.  

Although we won't get to see everyone we would have, it is still a great time to get together and enjoy the outdoors. We'll devour some good food, imbibe a few too many beverages, and I'm sure take some embarrassing photos.  Make sure to like my Facebook page for updates!

For the occasion, my aunt and I have put together a surprise.  Apparently the "adults these days" are in to root beer barrel shots...out of an ashtray.  Don't ask me!  I don't take shots, but I guess it's the thing to do!  So I set out to make my own Root Beer Schnapps for the occasion, and I'm going to share the recipe with you!  


I quadrupled this recipe to have plenty to go around.  You can do this in MINUTES and be ready to go!

INGREDIENTS:

1 cup very hot water
3⁄4 cup white sugar
1 cup vodka
1 teaspoon root beer concentrate
1⁄2 teaspoon vanilla

DIRECTIONS:

Dissolve sugar in hot water.
Add vodka and root beer concentrate and vanilla stir well.
Store in air tight container.

YIELDS:
2 1/2 cups

EASY-PEASY, right?!  So yeah, I have ten cups of this stuff if you're interested, hah!


We also ordered some ashtrays from Amazon.  You can find them HERE if you're wanting to share in this excitement.  
Make sure you get an ashtray that completely separates each side.  Fill one side with your schnapps, the other side with beer, and SHOOT IT!  Like I said, I have not tried this, but I surely will be this weekend.  Let me know that you think!!

Fall Sweet & Salty Snack Mix

I do not like candy corn.  Pure sugar, grainy, super sweet.  Never been a fan of it.  Mike loves it, of course.  Hah!  If you were at our wedding, you know our eating habits positively compliment each other (I like white meat, he likes dark meat, for example). 
 
About two years ago, my mom introduced me to a wonderful fall snack mix.  It had candy corn in it.  I avoided it all together...but eventually couldn't hold myself back from a treat.  Alone, the items included are nothing special.  But a pretzel with a candy corn for some reason tastes delicious.  And we all know that chocolate and anything is 100% enjoyable. 
 
I had a few ladies over for some wine last week and with the addition of some homemade fall décor (posts to come soon), I wanted some fall treats as well.  And I remembered this delicious mix of awesomeness. 
 
::Ingredients::
 
1 12.6 ounce bag of M&Ms (I used chocolate, but you could be adventurous on this)
1 canister of peanuts (I used unsalted)
1 bag of pretzels (I used twists)
1 bag of candy corn
 
Add to festive bowl.  STIR!
 
**I eyeballed my ingredients when dumping them in to the bowl.  I ended up using the whole bag of M&Ms, about 1/3 canister of peanuts, half the candy corn, and 1/3 bag of pretzels.  Essentially, you can make the mix heavy on whichever ingredient you prefer.  My mix made a large glass bowl that after the fact fit into three to four sandwich bags.  And I had lots of the separate ingredients left over, save the M&Ms.   
 
 
We each took a bag to work the next day.  I pulled out this lovely glass dish I got from my grandma and set it on my desk with a little gift tag (found at Target).  I also sent a bag full to one of my coworkers who said she loved this stuff!  She managed to make it last two days.  Meanwhile, coworkers who often walk by my desk were very happy to have a little treat to indulge on!
 

It made me feel great to share a little love.  Have you tried this mix before?  I highly recommend it.  Delicious and very cheap!

Coffee Concentrate - Amazing New Discovery!

Yesterday, I had to stop at the grocery store on the way home.  Little Lola was all out of vegetables!


Of course, I strayed from my list a little bit and picked up a few extra things.  I did pretty dang good, though. 

My two brag-worthy finds?

A six-pack a Klondike Bars (Reese's) for about 13 CENTS.  I believe they were $1.63 and had a $1.50 coupon right on the door for me to use.  SCORE!  Dang end-cap bargains.  I don't know that I've ever had a Klondike Bar...but when Mike asked what I got him, I said "What Would You Dooooo?"  And he goes, "You got me a Kit-Kat Bar?" 

Nope.  Try again. 

Now...on to the reason you're here.  COFFEE!! 

Whenever I open one of the small refrigerators at work, the bottom shelf is taken up by a 33 ounce bottle of this:

I got to try some of it at an ice cream social a few months ago.  It was the mocha flavor poured over dairy-free ice cream made with coconut milk - NadaMoo, if you're interested.  The coffee was good, but was combined and melted with the ice cream, so we didn't get the full effect. 

Yesterday, there was a small end-cap cooler filled with smaller versions of the above concentrate.  There were also ready-to-drink glass bottles as well (similar looking to those Starbucks drinks in glass bottles). 
After reading the concentrate labels, I discovered I could get 4 servings of DELICIOUS coffee for less than six bucks with the concentrate.  And all I had to do?  ADD WATER. 

Are you kidding me?  How is this not a phenomenon?!  I just taught you how I was making my own iced coffee at home.  Now as of yesterday, I've stepped in to a whole new realm. 

This morning I put together the most delicious coffee ever in about one minute just before stepping out the door. 

In your to-go mug add:
  • Ice
  • 1/2 Cup Concentrate (I purchased the Vanilla)
  • 1/2 Cup Water
  • Splash of creamer/milk (SPLASH ONLY!  This coffee is delectable on its own, but Mike's sis left some creamer at our house, so I suppose I'll attempt to use it up) 
  • Shake
  • ENJOY!
You can also drink this hot, but as mentioned in my last post, I'm digging iced coffee right now.  THIS COFFEE IS DELICIOUS.  It tastes ridiculously fresh.  The hint of vanilla in my mug is so light and refreshing.

This is a local company started by two neighbors in 2010.  I can certainly attest to the fact that they have done it right and done it well!!

Well done, gentlemen.  They are absolutely hitting the nail on the head.  I am going to sing their praises to anyone who will listen.  My hubby can be sort of a coffee snob and I have no doubt that he will have his mind blown this morning - I texted him the recipe when I got to work.  Just took another swig...SO GOOD!  I am currently enjoying my mug at the front desk, no telling what clients will hear my amazing review!

Cookies for Breakfast {Chocolate Chip Oatmeal Pancakes}

Yesterday we had cookies for breakfast.  Or at least it tasted like it!  We had chocolate chip oatmeal pancakes.  Which were actually pretty healthy.  No sugar, whole wheat flour, and no syrup needed.

These are very easy to make.  I would say this makes enough for one person, or two people if you are also eating something else.  This made 3 medium pancakes for us, about softball size.  We split them and then had eggs as well.  If you are hungry/feeding more people, I would suggest doubling the recipe.

Ingredients:

1 very ripe medium banana  (I used a large, ripe banana)
1 teaspoon baking powder
1 flax egg (1 Tbsp flaxseed meal + 2.5 Tbsp water)  **I will explain this soon**
Pinch salt
1/2 teaspoon vanilla extract
1 Tablespoon almond butter  (I used peanut butter)
1 Tablespoon canola oil (I used coconut oil)
3 Tablespoons almond milk (or other milk)
1/2 cup rolled oats (or gluten free oats)
1/4 cup whole wheat flour
3 Tablespoons semisweet chocolate chips

FIRST:  Make your flaxseed egg.  WHAT THE HECK IS A FLAXSEED EGG?  It's a handmade egg substitute.  I got my start here.  I put 1 tbsp milled flax with just under 3 tbsp of water.  Stir, and put in fridge for about 15 minutes.  It will thicken in consistency and be much better binding for your pancakes.
This is the finished product
...Once that is finished, start with your actual recipe.

1.  Mash banana with your baking powder.  It gets sort of fizzy and weird.  Have no fear!


2.  Add your flax egg, oil, salt, vanilla, almond butter, almond milk and stir.

3.  Lightly stir in oats and flour.

4.  Gently fold in chocolate chips.


5.  Place on griddle and cook for 2-4 minutes on each side.


They take quite a while to cook.  Make sure your pan is not too hot.   Then...

ENJOY!!!  They are delicious!  


Next time, I will add cinnamon {ifreakinglovecinnamon}, maybe some more PB, and definitely double the recipe so we have more to enjoy.  This would be an easy thing to freeze and take to work for breakfast.  YUMM!!

Quick, easy, fairly healthy...just the way I like it!  And I happen to love pancakes.

Handmade Citrus Lime Mojito

Around a month ago, we stopped at a liquor store and I checked out the clearance bin (DUH).  There was a large bottle of mojito for $10 (liquor included) so I jumped at it.  Turns out, the stuff is great!

 
Since then, I've been concocting fantastic cocktails at home using fresh ingredients.  Mike even took a stab at a mojito smoothie one weekend.  This Smirnoff mix is worth it, especially if it's on clearance!
 
Citrus Lime Mojito
 
Ingredients:
 
One small finger-full of fresh mint
 
One clementine
 
Half of one lime
 
Coconut Water
 
Mojito mix
 
Sugar
 
Ice
 
Place your mint, clementine, and lime in the bottom of a shaker.  Muddle with sugar if you would like to.  I used the end of a wooden spoon. 

 

 
 
Add a bit of coconut water (maybe 1/4 cup) and your mojito mix (whatever amount you prefer).  Also add about a 1/4 cup of crushed ice.  Close your shaker and SHAKE IT UP! 
 
Pour into a lowball glass with a bit of ice.  You could even salt or sugar the rim if you wouldl like to.  Garnish with some more fresh mint and ENJOY your fantastic summer drink that you made yourself at home!!
 

 
 
Our other variations of this drink have included:  leaving out the clementine, using fresh mango and a bit of milk and blending in a blender, adding or subtracting sugar, fresh lime or lime juice, and you could also add lemon juice as well. 
 
This drink is flexible depending on what you have in your refridgerator.  You could easily include any fruit and shake with any additional liquor that you would enjoy.  We have loved making our "craft cocktails" at home and enjoying them on the patio!  Let me know what you come up with!

Infused Vanilla Sugar - Great Gift Idea!

Are you ready for another ridiculously easy project that ANYONE can do?  I've been on a roll lately of at home projects that are accessible and even kid friendly.  Check out my DIY section for ideas!

This project only requires two ingredients, one vessel, and a knife.  Shout out to my friend Lexy for the great idea! 

You will need:
  • 1 whole vanilla bean
  • 2 cups granulated sugar
  • sharp knife
  • something airtight to store your sugar/finished product  

1. Put two cups of white sugar into your vessel.

2. Place your bean on a cutting board and use a small, sharp knife to slice it open lengthwise.  This takes a steady hand and patience, so be careful! 

3. When you have opened your bean, gently scrape the seeds out and put them in to your sugar jar.  These seeds are small and moist, so again, have patience and try to get as many of them as possible. 

4. Add the scraped bean to your jar and SHAKE!  I tried to keep shaking it up every few days.

5. Let your sugar infuse for preferably a month.

6.  ENJOY!  Use this sugar in your coffee, drinks, baking, oatmeal, anything where you would like a bit of extra flavor.   


After two weeks, I bought some smaller mason jars at Target and scooped some sugar in to each of them.  I put 1/4 of a bean in to each jar as well to keep the aroma going.  I then hot-glued some festive ribbon around the lid and sent them off as Christmas gifts!  I asked the recipients to let it steep for two more weeks before enjoying...mean, right?!



Lexy also made her version of infused vanilla sugar, as well as some lavender infused sugars.  HOW CUTE is her interpretation?  I think she may have beat me for creativity and cuteness!


For lavender infused sugar:  add 1-2 tablespoons of chopped (or food-processed) culinary lavender to two cups of sugar.  Then shake and let steep for three to four weeks.  ENJOY!

Baking Bowl


How have I spent my Superbowl Sunday?  I'm not a gigantic sports fan, so I occupied myself other ways.  I slept in, did the usual dishes/cleaning/etc, and watched James and the Giant Peach, have you watched that lately?!  Such a strange movie.  Mike and I also finished Season 3 of SoA finally.


On top of that, I've made a few goodies I've been wanting to try.  First:  Zucchini Tots, recipe found here.  Mine are more zucchini muffins, but they are delish!  And fairly healthy.  Nom nom.  They are easy to make, the most time consuming was shredding the zucchini!


2 cups zucchini, grated
2 egg 
1/4 yellow onion, diced
1/2 cup cheese (I used cheddar)
1/2 cup bread crumbs (I used Panko Lemon Pepper)
Salt and Pepper


  

1. Preheat oven to 400F. Spray a mini-muffin (I used a regular muffin pan) tin with non-stick spray, set aside.
2. Grate the zucchini and then place in a dish towel to squeeze out the excess water.  I used paper towels, and this is a NECESSARY step so they aren't soggy.
3. In a bowl combine, the egg, onion, cheese, bread crumbs, zucchini, salt and pepper.
4. Using a spoon, fill the muffin cups to the top. Bake for 15-18 minutes, or until the top is browned and set.

We also had a lot of pretzels around here.  We bought some in bulk a while back and have had a bag waiting to be enjoyed.  So I spruced them up and made Cinnamon Sugar Pretzels.  Also pretty tasty, and VERY easy to make!
1 (16 oz) bag pretzel twists
⅔ cup vegetable oil
½ cup sugar
2 tsp cinnamon

Preheat oven to 300 degrees. In a medium sized bowl mix together vegetable oil, cinnamon and sugar. Add pretzels and stir to coat. Place in oven and bake for 30 minutes, removing twice to stir.



Let cool!  They are super hot when they're done so resist the urge to taste!  I learned the hard way.

Lastly:  Adventures in Beef Tongue.  Not my decision.  I'm all about trying new foods, but this is one I have been avoiding.  We got a bunch of meat a while back from Mike's uncle.  Tongue included. Eck!  Mike had it in the crockpot all day and the thought of it just made me...uh, ick!  He made it into tacos.  I tried a piece from the pan, which I spit in the trash.  It doesn't TASTE badly, it's more so the texture...and the idea of it (mind over matter!).  You should at least try it if you can.  I tried a bite of his tacos he made with pico, I mean...it wasn't terrible.  But I am settling on waiting for fish to have fish tacos.  I have eaten a lot of weird meats, but I don't think I'll ever be having TONGUE again!!

Easy Pear Crisp - New Fall Treats

I'm about to blow your mind and burst the "pumpkin-everything" bubble right about now.  Is anyone else sick of pumpkin?  I love me some pumpkin desserts, but aren't we ready for something new? 

Fall does not equal pumpkin everything.  Have you considered...PEARS?!  Like, pears with deliciousness filled in, and then baked?  Thus, making a new fall treat that takes only minutes to prepare and a few more to finalize.

You're on board, right?

Here we go!

I found this guest post on the Whipperberry blog I came across one day.  Mike had randomly bought two pears shortly before this, so I decided to surprise him with a gourmet dessert at home one night.


EASY FALL PEAR CRISP

2 ripe pears
3 tbsp. oats
3 tbsp. honey - I used half honey/half agave
3 tbsp. cold unsalted butter
¼ tsp cinnamon - If you know me, you know I always add extra!

Instructions

1. Preheat the oven to 375 F.
2. Cut pears in half lengthwise and use a spoon to scoop out the core.
3. Place foil in small baking dish and brush with butter/oil. Place the pears cut side down in the dish and bake for 15 minutes to soften.
4. While the pears are baking, combine oatmeal, honey, butter, and cinnamon in a small bowl.
5. Remove warm pears from oven and turn over.  Divide the mix into the four hollows of the pears.
6. Place the pears back in the oven and bake for an additional 15-20 minutes until the crumble is browned and the pear cuts easily with a fork.
7. Top with your choice of whipping cream, vanilla ice cream or Greek yogurt.  We opted for a bit of almond milk to add some juiciness to our treat. 

This little treat is so quick and easy!  And my personal favorite...it doesn't make a lot of dirty dishes.  We each had a whole pear for dessert and it wasn't horribly sweet or too filling.  One nice thing is that you can easily scale up this dessert for many people, and it still won't take long or create a big mess.  You can also add a few things to your mix like nuts, berries, chia or flax seeds, etc.

Whole Wheat Belgian Waffles from SCRATCH!

Saturday morning I got the crazy idea/craving for homemade waffles.  I perused for 30 seconds for a base recipe and worked off of this one.  As usual, I was missing or didn't have enough of a few ingredients, but I'm getting better at making it work.

Necessary Tools/Equipment:

-3 bowls
-hand mixer
-waffle iron

And your ingredients, of course!

This is what I ended up using:

2 cups whole wheat flour
3/4 cup white sugar
3-1/2 teaspoons baking powder
2 eggs, separated
1 cup milk
3 Tbsp butter, melted
1 Tbsp vanilla extract
1 whole mashed banana (very ripe)
1/4 cup water

As you can see  if you checked out the base recipe, I had to improvise on a few things by adding the banana and water for a bit of liquid and flavor due to being short on milk.  I also used WAY LESS butter.  I do not regret it!  Adding banana to anything always makes it taste better and enhances the texture.

In a large bowl:  combine flour, sugar and baking powder.
In medium bowl: lightly beat egg yolks. Then add milk, butter and vanilla; mix well.
Slowly stir into dry ingredients until combined.
In a small bowl:  beat egg whites until stiff peaks form.  Slowly fold into batter, take your time!
This is when I added my mashed banana, followed by water.  It helped the batter to thin out.

Bake in a preheated waffle iron until golden brown. I let mine go for about 1 minute and 45 seconds.  I then served with an array of peanut butter, Nutella, strawberries, syrup, and coconut.  They tasted delicious and there were plenty for leftovers!!

Pinterest Prodigy

Okay, so I'm not a prodigy, but I had to get you here somehow!  I'm going to give you a break from my preaching!  A friend of mine did a post about her Pinterest adventures and I'm going to follow suit.  Thanks Bridget :)  ...Actually I think Bri did, too.  Thanks both of you!  I have been on the Pinterest train for over a year now, and now that I have time and more space, I've been getting to do/make some fun stuff.

1.  One of my favorites is super easy...putting a frame around your thermostat!  I got this wood frame super cheap at Michael's.  I mixed a dark green color by hand with my acrylics from college and painted it.  I LOVE the way it looks!












2.  Delicious pumpkin seeds, I made the Zesty :)












3.  Cleaning the dishwasher.  It seemed to get rid of some smells which was nice.  You can also "defunk" your towels using one cycle vinegar, one cycle baking soda.  Who knew nasty vinegar was so nice?

4.  Cleaning old pans.  This did NOT work for me and I was super bummed!

5.  Doily Artwork.  Mine obviously looks a lot different, but it matches our loft decor.  I now officially own Mod Podge, yippee!










6.  Greek Yogurt Dip.  I made the chocolate kind, obviously.  We ate it with cinnamon graham crackers :)  Hint:  Do not use fat free Greek yogurt, it gets very sour.

7.  Overnight Cold Oatmeal.  I made these for Mike and I to take to lunch.  Without the flax seed because I am a cheapo ;)  Mike actually really like them, score!  Super cheap and easy.

8.  Meet the Maids & Men.  I made a slideshow for our guest to get to know our wedding party with fun facts, current info, and memories with Mike and I.

9. Nutella Mug Cake.  I finally caved and made a mug cake a while back.  Just as promised, they are easy and delicious!  I preferred the Chocolate Chip Cookie Dough one, Mike liked the Nutella.  Sooo good!

10.  Chicken/Spinach/Pasta Bake.  I have made this a few times, and took it to a potluck which worked nicely for a main dish.  I even used canned/shredded chicken to save time.  Very yummy!

Okay, there's a good ten for you  :)  Moral of the story...USE PINTEREST!  I have a few projects lined up to make, but saving some money for now. Show me your goodies!  You don't have to be a wife to enjoy decorating and cooking/baking.
